Beet and Carrot Super Food Salad

This salad is awesome and is a great gateway food for any beet hater to develop an appreciation for them. Just ask my husband, former beet hater.

2 medium beets
4 large carrots
1/2 inch chunk of ginger
1 garlic clove
1/2 lemon
1/4 cup of olive oil
1/2 tbsp cumin
1/2 tbsp cinnamon
1 tsp spicy paprika
salt to taste

This salad is a bit hard to mix so I like to do it in layers. If that is too annoying just shred it all together and do your best. Peel the 2 beets and 4 carrots. Grate the beets and place them in a bowl. Grate the carrots and layer them on top. Grate or mince the garlic and ginger and spread them over the salad. Squeeze the lemon juice out into a container and add the rest of the ingredients to it. Shake it up good. Pour it over your salad. This salad is fun and feisty. A good mix of sweet and savory. Let it sit for a little to absorb all the good flavors. Enjoy!
