Best Easy Vegetable Soup

6-8 Zucchini
1 bag Baby Carrots
3 Sweet Potatoes
3 Onions
1 bunch fresh Dill
1 bunch fresh Cilantro
Salt to taste

Cut up the vegetables and herbs into a large soup pot
Cover with water
Bring to a boil and then simmer for 1 1/2 hours
When all the vegetables are soft use an immersion blender to puree the soup until it it smooth
Add salt to taste
Note: this soup comes out pretty thick but if you want it thicker you can add more sweet potatoes
