Chicken Lo-Mein

A friend sent this when I gave birth to my 5th child. All of my kids enjoyed it (!) – for the ones who don’t like cooked veggies, the veggies are chopped very large, so I could easily serve them only the chicken and spaghetti. When my friend told me that it’s really easy to prepare, and only uses one dish, I knew I was going to get this
recipe!

1 package spaghetti – pre cooked.
1/2 kilo package chicken cutlets – cut into chunks or strips
1/3 cup oil
1/3 cup soy sauce
1 1/2 tsp. garlic powder
3/4 tsp salt
pepper
1 can mushroom
1 red pepper cut into large wedges or diced large
1 onion cut into large wedges or diced large
(or substitute with any other stir fry vegs)

Mix pre-cooked spaghetti, raw chicken, raw vegs, and other ingredients all together. Pour into a 9×13 pan, cover tightly, and bake for 1-1.5 hours at 200 Celsius.

I made this for dinner. Quantity is just enough for 2 adults and 5 young kids. Everyone enjoyed and the picky ones were happy to be able to remove the veggies as author noted. Thank you. You got my vote.
