Quinoa Salad

1 cup quinoa, rinsed and cooked
Seeds of 1 pomegranate
1 can of either mandarin oranges or 1 orange cut into small chunks
Optional: scallions/sesame seeds/small purple onion bits
Sprinkle a bit of parsley and drizzle small amounts of olive oil and lemon juice
Mix all together!
