Menu for the Week of October 26
Here’s my menu for the week of October 26:

Sunday: lunch — omelette with sauteed vegetables; dinner — black bean soup with onion, garlic, sweet potato, red pepper
Monday: lunch — meatloaf, curly fries, chopped salad; dinner — sweet potato lentil patties
Tuesday: lunch — roasted fish with tomato, peppers, green beans, garlic, lemon; dinner — lasagna
Wednesday: lunch — chopped liver with homemade crackers, fresh vegetables; dinner — omelettes, zucchini soup
Thursday: lunch — chopped salad with tuna/salmon from a can; dinner — orange soup with cheese melted in

The cracker recipe is something like this:
Boil your choice of rice, quinoa, millet, or other grains together. Use enough water so that they’re very sticky. Blend up 2/3 in your blender. Mix back together. Add anything you want at this point — nuts, seeds, spices, etc. Press the mixture onto a baking sheet. Sprinkle salt, cracked pepper, or other spices. Spray with some olive oil. Bake at 350 until slightly crispy. Serve and enjoy!
